Curry Chicken with Coconut Rice


My daughter made this beautiful dish for her supper. She lives alone and I am very happy that she actually cooks healthy food. So she sent me the picture and said it's quick, easy and very tasty!

Here is the recipe, try it and let me know what you think!

Ingredients
For the rice:
1 cup brown rice
2 1/2 cups of water
1/2 can of 60% coconut milk (400 ml)
Salt & pepper

For the chicken:
1 boneless chicken breast cut into 1 inch pieces
1 onion thinly sliced
1/2 tsp garlic powder
3 tsp turmeric
1 tsp garam marsala
2 tbsp oil
2 lime leaves
1/2 can coconut milk (optional)

Directions

  1. Wash the rice well and put in a saucepan with the water. Heat to a boil, then reduce to a simmer and cook 15-20 minutes until almost all the water is absorbed. 
  2. Add the coconut milk, cover and turn off the stove.

  3. Heat 1tbsp of oil in a pan and add 1 tsp of turmeric and the garlic powder to it. Add the chicken and cook on medium high heat.
  4. When the chicken is almost fully cooked, take it out into a bowl.
  5. Return the pan to the stove and heat the second tbsp of oil. Add the onions, 2 tsp turmeric, the garam masala and the lime leaves. Sauté until the onions are soft. Put the chicken back in the pan.
  6. When the chicken is cooked you can take it off the heat and add coconut milk (I just added the rest of the can from the rice!)
